Contractors wont work with insurance companies anymore

Tried to find a contractor to repair my storm damaged roof. THREE different roofers told me they dont do insurance work anymore because insurance companies are impossible to deal with. They lowball estimates, take months to pay, and require endless supplements.

One guy literally said "Id rather give you a fair price and have you pay cash than deal with your insurance company for 6 months." And honestly? I get it. But now Im stuck between an insurance company that wont pay enough and contractors that wont take insurance.

How is this system supposed to work when nobody wants to participate in it?
